The lovely Catherine from Boutique Bake has been sharing her delicious baking recipes with us (you can check out more Boutique Bake recipes here) and if you're embracing a healthy life this month, these are the perfect treat for your cheat day.
I am a big fan of almond butter, it is such a delicious snack spread on some toast or sliced apple, and it is a great addition to baked goods! For this recipe I have combined the flavours of chocolate and almond, to make these delicious cupcakes. Some extra texture has been added by scattering some chopped almonds on top before popping them in the oven!
Ingredients
- 200g self-raising flour
- 175g caster sugar
- 175g softened butter
- 1 tsp. baking powder
- 3 eggs
- 30g cocoa powder
- 2 dessertspoons almond butter
- 50g chopped almonds (to decorate)
Method
- Heat the oven to 180C/160C fan/gas 4.
- Line a muffin tin with 12 paper bun cases.
- Add the butter, sugar and almond butter to a large mixing bowl and blend using an electric mixer, until all ingredients are well combined and creamy.

- Next, add in the eggs, one at a time and mix well
- Finally, fold in the flour, baking powder and cocoa until well combined
- Next, fill each of your bun cases until two-thirds full
- Place some crushed almonds on top of the mixture and press down lightly
- Place the tray on the middle shelf of the oven
- Bake for 20 mins or until a skewer inserted comes out clean
- Leave to cool slightly and then place onto a wire rack to cool completely
- Enjoy!
