Bake With Beaut.ie - Wholemeal Soda Bread
Last week on Bake With Beaut.ie we took you to chocolate heaven with Rosanne's delicious flourless brownies. Now, the Like Mam Used To Bake blogger is sharing her recipe for oldie but very, very goodie soda bread. Aprons at the ready!
Soda bread is my emergency bread. Mixed and baked within the hour it has saved me on many occasions when time has run away from me, or when I invite people over last minute in a moment of insanity. It’s also a great weekend baking project, and for me creates the illusion that I am indeed a domestic goddess, without having to put in the actual effort required.
Perfect served with lashing of butter and a bowl of soup on a cold day this is a wholemeal version of soda bread. I like to bake it in a loaf tin as opposed to a round. Feel free to add some seeds to this mix too for extra texture. It freezes beautifully to so I always have some in the freezer for breakfast or lunch on days when time is in short supply.
Ingredients
350g wholemeal flour
100g plain flour

1tsp bicarbonate of soda
1tsp salt
400ml buttermilk
Method
Preheat the oven to 220°C/425°F/Gas Mark 7. Line a 2lb/900g loaf tin with parchment paper.
Add the flours, bicarbonate of soda and salt to a large bowl, give them a little stir to mix together and make a well in the centre. Add the buttermilk and stir until combined.
Turn the dough out on a lightly floured work surface and knead gently just until it holds together.
Transfer the dough to the prepared loaf tin, place into the preheated oven for 20 minutes. Turn the heat down to 200°C/400°F/Gas Mark 6 and bake for a further 30 minutes. The bread is done when the bottom sounds hollow when tapped – cautiously remove from the tin to check and be careful as it will be hot. Remove from the oven; allow to cool for a few minutes in the tin, before transferring to a wire rack to cool completely.
