Sweet Saturday: Perfect Pancakes

The lovely Catherine from Boutique Bake has been sharing their delicious baking recipes with us in her Sweet Saturday series (you can check out more Boutique Bake recipes here).

And today, since it’s not exactly warm and sunny outside,  we are bringing summer to our kitchen!

Where there’s a whisk, there’s a way.

I am a huge pancake fan, and pretty much have them every weekend!

This recipe is really quick and easy to put together.It’s lighter than the traditional pancakes, as uses bananas and oats instead of the usual flour. They taste amazing with berries and maple syrup, or crispy bacon!

I use my Nutribullet to whip these together, but if you don’t have one, just use an electric whisk to beat together the ingredients until they are really well combined. The oats will not be quite broken down, but the result will still taste delicious!

 

So let’s get started!

Ingredients:

  • 150g oats
  • 300ml milk
  • 2 eggs
  • 1 banana (chopped)

To serve:

  • Raspberries
  • Blueberries
  • Maple Syrup

Method:

  • Place all ingredients in your Nutribullet/electric mixer and blend together until completely combined
  • If you do not have an electric mixer/Nutribullet, just make sure you mash up the banana really well to avoid too many lumps in your pancakes!

  • Place a pan onto a medium/high heat
  • Melt some butter or coconut oil, to avoid the pancakes sticking
  • Pour approx. 2 tablespoons of batter into the pan (to make nice small pancakes)

  • Allow to cook until small bubbles appear in the batter then flip over (I use a spatula!) to cook the other side

  • Place cooked pancakes in an oven proof dish in the oven at a low heat (approx. 100oC) to keep warm, while cooking up the batch

  • This mixture makes about 12 small pancakes, so you can serve in a lovely pancake stack and then everyone can help himself or herself!

 

  • Serve with layers of berries in-between each pancake and a pour over a generous helping of maple syrup!

  • Decorate with some icing sugar and enjoy!
